With more than 25 years of global culinary experience across luxury hotels, fine-dining restaurants, and international collaborations, Chef Matteo brings exceptional expertise and creative vision to lead the resort’s culinary team.


Born in Cremona, Italy, Chef Matteo studied at culinary school before beginning his career in northern Italy. His passion for gastronomy soon led him abroad, where he honed his craft in Thailand and Singapore, later returning to Europe to work in the Czech Republic, London, and Greece. His international journey continued across the Caribbean, Russia, Ukraine, Kazakhstan, Georgia, and Qatar, where he led large kitchen brigades in five-star hotels and luxury establishments. Throughout his career, Chef Matteo has held key culinary leadership roles across the globe. He served as Executive Chef in international hotel chains and boutique hotels in Doha – Qatar, Tbilisi – Georgia and helmed kitchens in Singapore, the Caribbean, and Eastern Europe. Earlier in his journey, he trained at the world-renowned The Fat Duck, The United Kingdom, under Michelin-starred standards, which deeply influenced his approach to fine dining. In 2023, Matteo served as an ambassador for Italian cuisine worldwide, focusing on its bid to be recognized as a UNESCO Intangible Cultural Heritage element. The bid was themed “Italian Cuisine: Sustainability and Biocultural Diversity.”

With his extensive international background, Chef Matteo brings a distinctive blend of tradition and creativity, ensuring the menus appeal to the diverse palates of culinary lovers.
