“Thịt mỡ dưa hành câu đối đỏ
Cây nêu tràng pháo bánh chưng xanh”
or
“Fatty pork, pickled shallots near,
Red couplets are bright for the New Year.
New Year pole stands, firecrackers boom,
Bánh chưng so green, in festive bloom.”
During the Tet holiday, pickled small leeks and onions symbolize the unity of Vietnamese culture, cherished from the North to the South. In the peach blossom land of northern Vietnam, pickled onions and Banh Chung (square sticky rice cakes) form a timeless culinary duo, embodying the spirit of the Lunar New Year. Meanwhile, in the apricot blossom land of southern Vietnam, shallots and Banh Tet (cylindrical sticky rice cakes) represent essential Tet specialties that bring families together. More notably, with the skilled hands of women, shallots are transformed from their naturally pungent and spicy taste into exquisite dishes, which become a highlight during joyful Tet gatherings among men.
For Ms. Bong, hailing from Hoa Nhon in Hoa Vang, Da Nang, her journey with humble small leeks was no different from many others. Yet, she poured her heart and soul into these ordinary vegetables, transforming them into something extraordinary. Through her dedication and passion, she successfully established a unique brand for Hoa Nhon small leeks, Kieu Huong Hoa Nhon. It’s a testament to her hard work and her love for her roots.
The Idea Took Shape
Hoa Nhon has long been recognized as a precious land for cultivating small leeks. It is renowned for producing uniquely aromatic shallots that are truly unmatched in flavor. Sadly, this remarkable trait has often gone unnoticed. Each harvest season, local farmers rise before dawn, bundling and selling their small leeks at the market, only to find themselves grappling with low prices imposed by buyers.
Seeing her community’s struggle, Ms. Nguyen Thi Bong was inspired to take action. With a heart full of compassion, she embarked on a journey to create high-quality products that would uplift her family and the local small leek farmers. Her first creation, “Sweet and Sour Pickled Small Leeks in Fish Sauce,” stemmed from a cherished recipe from her hardworking and talented mother-in-law. With the encouragement of her family, friends, and the Women’s Union, she bravely expanded her production efforts, transforming the small leeks of Hoa Nhon into a cherished specialty that could bring recognition and support to her beloved community.
Overcoming Challenges
In 2017, a remarkable vision sparked to life as Ms. Bong partnered with the Hoa Nhon Women’s Union and the People’s Committee, giving birth to the Hoa Nhon Small Leeks Cooperative Group. With a deep passion for her community and its resources, she transformed her home into a bustling production workshop. There, she expertly sourced small leeks from local farmers associated with the cooperative, turning their fresh produce into market-ready delights.
However, the journey was not without its hurdles. The fledgling business grappled with various challenges: product preservation techniques were shaky at best, and the market remained largely untapped, overshadowed by low public awareness. Ms. Bong had to contend with rudimentary equipment that hindered efficiency, elevated production costs that threatened sustainability, and the scarcity of supply during the off-season. Most farmers focused on cultivating shallots primarily for Tet, complicating production when water was scarce and labor costs surged.
Building a Brand
Recognizing the potential of the shallot processing model, the People’s Committee of Hoa Nhon Commune graciously supported Ms. Bong’s initiatives by providing funding and facilitating training programs for local farmers. To address the issue of raw material supply, a collaborative approach led to implementing off-season intensive farming.
Moreover, Ms. Bong’s cooperative received valuable financial assistance from the Da Nang Women’s Union, allowing it to invest in modern production equipment. This includes Small leek drying machines, shrink wrap sealing machines and ozone sterilization machines.
These advancements have significantly improved the quality and efficiency of the products, showcasing the positive impact of teamwork and community support.
Expanding Further
Thanks to the meticulous support of local and city-level authorities, Ms. Bong has successfully broadened her product offerings, adhering to stringent food safety standards and employing VietGAP-certified cultivation methods. Her dedication has earned the business HACCP certification, underscoring its commitment to strict food safety compliance.
Today, the Business Household Nguyen Thi Bong stands out with its fully integrated production model. It sources small leeks solely from VietGAP-certified farmers within the cooperative, guaranteeing customers access to high-quality and safe products.
