The primary ingredient is black anchovy, harvested during the peak fishing season. After careful selection, the fish are mixed with salt sourced from Sa Huynh, De Gi, or Ca Na salt fields. The salt is stored for several months before use to reduce bitterness and enhance purity.
The fish and salt are then placed in ceramic jars or fermentation containers according to traditional proportions and left to ferment naturally for 12 to 18 months.
The result is premium first-press fish sauce distinguished by its rich amber-brown color, intense aroma, and naturally sweet aftertaste derived from black anchovies—a flavor that has defined Nam O’s reputation for centuries.
